Good food and family is at the heart of every Louisianian.  We say "Good Mornin", "How you doin" & "How ya Mama an them doin"  as a Hello and anyone allowed across the threshhold is automatically considered family upon introduction.  An invite into someone's home is an invite to the table. The sharing of good food while stories of back in the day are told over laughter and music is the culture inbedded in the soul of the city...a glimpse of the culture is what others crave but can never duplicate. 

 

From growing up in Natchitoches with a Mother easily ranked the best cook in the family to standing at the stove in New Orleans with one of the best to ever do it I learned the skills and techniques to create all the dishes I love. This is where my love for cooking began. 

 

Katrina brought me to Texas temporarily, but after settling here permanently years later I was introduced to TexMex and the best brisket I have ever eaten.  Honing my skills on the grill and making my versions of my favorite TexMex foods with just a hint of cajun flare if such a thing exists became my new muse.

In the kitchen is where I find my solace, and after more than 20 years of creating recipes that bring family together I opened Brimoja's Kajun Kitchen to share my love of cooking as a culture with others.
